Savory Baked Bean Bacon Bomb Recipe with Sweet Brown Sugar Glaze

  • 1 can (15 oz / 425 g) canned baked beans
  • ½ cup (100 g) packed brown sugar
  • 2 tablespoons yellow mustard
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Freshly ground black pepper to taste
  • 1 teaspoon smoked paprika (optional)
  • 1 tablespoon chopped fresh parsley (for garnish)
  • Non-stick cooking spray or parchment paper

Instructions

  1. Preheat your oven to 375°F (190°C). Line your baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. In a medium bowl, pour in the canned baked beans. Add onion powder, garlic powder, smoked paprika, black pepper to taste, and 1 tablespoon of brown sugar. Mix gently but thoroughly to combine without mashing the beans too much.
  3. On the lined baking sheet, arrange 6-7 slices of bacon side by side, slightly overlapping to create a solid base. Spoon half of the seasoned baked bean mixture onto the bacon, shaping it into a rough oval mound in the center.
  4. Carefully fold the bacon slices over the bean mound, tucking in edges to fully encase the beans. Use additional bacon slices if needed to cover the entire bomb, creating a sealed bacon shell.
  5. In a small bowl, mix the remaining ½ cup brown sugar with 2 tablespoons yellow mustard. Brush this glaze generously over the bacon-wrapped bomb, covering all surfaces.
  6. Place the baking sheet in the preheated oven and bake for 45-50 minutes until the bacon is crispy and caramelized and the glaze is bubbly and sticky. Halfway through baking, baste again with leftover glaze if desired.
  7. Remove from oven and let rest for 5-10 minutes before slicing. Sprinkle chopped fresh parsley on top before serving.

Notes

Use thick-cut bacon for best texture and sturdiness. Apply the glaze twice (before baking and halfway through) to develop a sticky caramelized crust. Watch the glaze near the end to avoid burning; tent with foil if needed. Resting the bomb before slicing helps the filling set. Leftovers keep well refrigerated for up to 3 days and can be frozen for up to 2 months.
