A quick and easy grilled cheese sandwich combining savory sloppy joe filling with melted cheddar cheese on buttery toasted bread, perfect for busy weeknights or casual gatherings.

Ingredients

Scale
  • 1/2 pound ground beef (or ground turkey for leaner option)
  • 1/4 cup ketchup
  • 2 tablespoons tomato paste
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon mustard (yellow or Dijon)
  • Salt and black pepper, to taste
  • 4 slices sturdy bread (white, sourdough, or country-style bread recommended)
  • 4 slices sharp cheddar cheese (or a blend of cheddar and mozzarella)
  • 2 tablespoons unsalted butter, softened (for toasting)

Instructions

  1. Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with your spatula as it cooks (about 5-7 minutes). Drain any excess fat if needed.
  2. Add the chopped onion and garlic to the beef and sauté for 2-3 minutes until softened and fragrant.
  3. Stir in the ketchup, tomato paste, Worcestershire sauce, mustard, salt, and black pepper. Mix well, then reduce heat to low and simmer for about 3-4 minutes until the sauce thickens slightly. If the mixture seems too wet, cook a bit longer to evaporate excess moisture.
  4. Remove from heat and set aside. You want the filling flavorful but not so saucy that it drips through the bread.
  5. Butter one side of each bread slice evenly. On the unbuttered side of two slices, layer a slice of cheddar cheese, then a generous spoonful of sloppy joe filling, and top with another slice of cheese to help bind the filling. Close the sandwich with the remaining bread slices, buttered side facing out.
  6. Heat the skillet over medium-low heat. Place the sandwiches in the pan and cook for 3-4 minutes per side, pressing gently with your spatula to ensure even browning. Watch closely to avoid burning—the bread should be golden and crispy, cheese melted and gooey inside.
  7. Once done, remove from heat and let the sandwiches rest for a minute before slicing.

Notes

Simmer the sloppy joe filling until thickened to avoid soggy bread. Use medium-low heat to melt cheese thoroughly while crisping bread. Let sandwiches rest a minute before slicing to prevent filling from spilling. For vegetarian version, substitute ground beef with plant-based crumbles or lentils. You can freeze assembled sandwiches before grilling; cook from frozen adding a few extra minutes.
