  • 2 tablespoons unsweetened cocoa powder (preferably Dutch-processed)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (227 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 1/4 cup (50 g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons red food coloring (gel or liquid)
  • 1 teaspoon white vinegar
  • 1/2 teaspoon espresso powder (optional)
  • 8 ounces (227 g) cream cheese, softened
  • 1/4 cup (57 g) unsalted butter, softened
  • 2 cups (240 g) powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, sift together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and light brown sugar using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then stir in vanilla extract, red food coloring, white vinegar, and espresso powder if using.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
  6. Use a cookie scoop or tablespoon to drop rounded balls of dough onto the prepared baking sheets, spacing about 2 inches apart.
  7. Bake for 10-12 minutes until edges are set but centers look slightly soft.
  8. Remove from oven and let cookies cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  9. While cookies cool, beat together cream cheese and softened butter until smooth. Gradually add powdered sugar, vanilla extract, and salt. Beat until fluffy and spreadable.
  10. Once cookies are completely cool, spread or pipe the cream cheese frosting onto each cookie. Optionally, sprinkle mini chocolate chips or red sanding sugar on top.

Notes

Use room temperature butter and eggs for best texture. Avoid overmixing after adding dry ingredients to keep cookies tender. Check cookies at 10 minutes to avoid overbaking; centers should look slightly soft. Chill frosting if too soft before applying. Vinegar reacts with baking soda to give signature tang and tender crumb. For gluten-free, substitute flour with a 1:1 gluten-free blend containing xanthan gum.
