  • 1/4 cup (85g) good-quality honey
  • 4 cloves fresh garlic, minced
  • 1/3 cup (80ml) low-sodium soy sauce
  • 2 tablespoons (30ml) apple cider vinegar
  • 3 large carrots, peeled and cut into chunks
  • 2 medium parsnips, peeled and sliced
  • 3 medium potatoes (Yukon Gold or red), cut into chunks
  • 1 medium onion, quartered
  • 2 tablespoons (30ml) olive oil
  • 1/2 teaspoon ground black pepper
  • Salt to taste
  • Optional: pinch of dried thyme or rosemary
  • Optional: 1/2 teaspoon crushed red pepper flakes for spice

Instructions

  1. Peel and chop carrots, parsnips, potatoes, and onion into roughly 1.5-inch chunks. Toss with olive oil and black pepper until lightly coated.
  2. In a small bowl, whisk together honey, minced garlic, soy sauce, and apple cider vinegar to make the honey garlic sauce.
  3. Pat the pork loin dry with paper towels and season lightly with salt and pepper.
  4. Place the coated vegetables in the bottom of the slow cooker and set the pork loin on top.
  5. Pour the honey garlic sauce evenly over the pork and vegetables.
  6. Cover and cook on low for 4 to 5 hours, until pork reaches an internal temperature of 145°F (63°C) and vegetables are tender.
  7. Remove pork loin and let rest for 10 minutes before slicing.
  8. Serve sliced pork over the root vegetables, spooning extra sauce from the slow cooker on top. If sauce is too thin, simmer on stove until thickened.

Notes

Use fresh garlic for best flavor. Rest pork after cooking to keep it juicy. Coat vegetables with olive oil to prevent dryness. Adjust sauce thickness by simmering leftover juices if needed. Can be made gluten-free by substituting soy sauce with tamari or coconut aminos. For a spicy twist, add crushed red pepper flakes. Pork tenderloin can be used but reduce cooking time by about an hour.
