Easy 10-minute lunchbox roll-ups made with turkey, cheddar, and cream cheese wrapped in flour tortillas. Perfect for kids and adults, these no-cook pinwheels are great for meal prep and customizable with your favorite fillings.

  • 4 (8-inch) flour tortillas
  • 1216 slices deli turkey breast (about 34 slices per roll-up)
  • 48 slices cheddar cheese (12 slices per roll-up, or 1 cup shredded)
  • 48 tablespoons cream cheese, softened (12 tablespoons per tortilla)
  • Optional: 1 cup fresh baby spinach leaves

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 15 minutes, or microwave for 10 seconds.
  2. Warm the tortillas in the microwave for 10-15 seconds wrapped in a damp paper towel, or in a dry skillet for 15 seconds per side.
  3. Lay one tortilla flat on a cutting board. Spread a thin, even layer of cream cheese over the entire surface, going all the way to the edges.
  4. Place 3-4 slices of turkey on the bottom third of the tortilla, overlapping slightly.
  5. Lay 1-2 slices of cheddar on top of the turkey, or sprinkle about 1/4 cup shredded cheese. Add a small handful of spinach leaves if using.
  6. Starting at the bottom edge, roll the tortilla tightly away from you, tucking the filling in as you go. Place seam-side down.
  7. Wrap each rolled tortilla tightly in plastic wrap or parchment paper, twisting the ends like a candy wrapper. Refrigerate for at least 15 minutes (or 5 minutes in the freezer) to set.
  8. Unwrap the chilled roll-up and slice into 1-inch rounds using a serrated knife with a gentle sawing motion. Each roll-up yields about 6-8 pieces.

Notes

Don’t skip the chilling step—it helps the cream cheese set and makes slicing much easier. Use room-temperature cream cheese to avoid tearing the tortillas. For best results, slice with a serrated knife using a gentle sawing motion. These roll-ups actually taste better after sitting in the fridge for a few hours as the flavors meld together. Store whole (unsliced) roll-ups wrapped tightly in plastic wrap in the refrigerator for up to 5 days. Slice just before serving for best texture. Can be frozen whole for up to 2 months.
