  • 12 ounces (340 g) pre-made pizza dough (store-bought or homemade)
  • 1/2 cup (120 ml) BBQ sauce (smoky, slightly sweet variety recommended)
  • 2 cups (300 g) cooked shredded chicken (rotisserie chicken recommended)
  • 2 large yellow onions, thinly sliced
  • 1 1/2 cups (170 g) shredded mozzarella cheese (whole milk mozzarella preferred)
  • 2 tablespoons (30 ml) olive oil
  • Salt and pepper to taste
  • Optional toppings: fresh cilantro or chopped green onions, pinch of smoked paprika, thin slices of jalapeño

Instructions

  1. Heat 2 tablespoons olive oil in a large skillet over medium-low heat. Add thinly sliced onions with a pinch of salt. Stir occasionally for 25-30 minutes until onions are soft, jam-like, and deeply browned but not burnt. Add a splash of water if onions start sticking.
  2. While onions cook, shred 2 cups cooked chicken in a bowl. Toss with 1/2 cup BBQ sauce and season lightly with pepper. Set aside.
  3. Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.
  4. On a lightly floured surface, roll or stretch the 12-ounce pizza dough into a 12-inch circle. Transfer to parchment paper.
  5. Brush dough edges with olive oil. Spread about 2 tablespoons BBQ sauce over the base. Sprinkle 3/4 cup shredded mozzarella evenly over the sauce.
  6. Add BBQ chicken evenly over the cheese, then spoon caramelized onions on top. Sprinkle remaining cheese over the pizza.
  7. Slide pizza with parchment onto preheated stone or baking sheet. Bake for 12-15 minutes until cheese is bubbly and golden and crust is crisp.
  8. Remove from oven and let rest for 5 minutes. Sprinkle fresh cilantro or green onions if desired. Slice and serve.

Notes

Caramelize onions low and slow to avoid burning and achieve deep sweetness. Use shredded rotisserie chicken for convenience. Brush crust edges with olive oil for a golden finish. If crust browns too quickly, tent with foil halfway through baking. For gluten-free, use cauliflower or almond flour crust and adjust baking time. Reheat leftover pizza in toaster oven or skillet to keep crust crispy.
