Best Baked Apple Cider Donuts: Easy & Healthier Cinnamon Sugar

These baked apple cider donuts are tender, fragrant, and coated in an irresistible cinnamon sugar crunch. Made with whole wheat pastry flour and Greek yogurt, they’re a lighter, healthier version of the classic fall treat that comes together in about 30 minutes without any deep-frying.

  • 1 ¾ cups (210 g) whole wheat pastry flour
  • ½ cup (100 g) granulated sugar
  • ¼ cup (50 g) light brown sugar, packed
  • ½ cup (120 g) plain Greek yogurt
  • 3 tablespoons (42 g) unsalted butter, melted
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • For the cinnamon sugar coating:
  • ½ cup (100 g) granulated sugar
  • 1 ½ tablespoons ground cinnamon
  • 2 tablespoons (28 g) unsalted butter, melted

Instructions

  1. Reduce the apple cider: Pour the apple cider into a small saucepan and bring to a boil over medium-high heat. Reduce heat to medium and simmer, stirring occasionally, until reduced to about ¼ cup (60 ml), about 8-10 minutes. Set aside to cool slightly.
  2. Preheat and prep: Preheat oven to 350°F (175°C). Spray a donut pan generously with non-stick spray.
  3. Mix dry ingredients: In a medium bowl, whisk together whole wheat pastry flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Combine wet ingredients: In another bowl, whisk together reduced apple cider, Greek yogurt, melted butter, egg, and vanilla extract until smooth.
  5. Bring together: Pour wet ingredients into dry ingredients and fold gently with a rubber spatula until just combined. Do not overmix.
  6. Fill the pan: Transfer batter to a piping bag or zip-top bag with corner snipped off. Pipe batter into donut cavities, filling each about ¾ full.
  7. Bake: Bake for 10-12 minutes, or until golden brown and a toothpick inserted into thickest part comes out clean. Cool in pan for 2 minutes, then transfer to a wire rack.
  8. Make the coating: While donuts are still warm, mix granulated sugar and cinnamon in a shallow bowl. Brush each donut lightly with melted butter, then roll in cinnamon sugar mixture until fully coated.
  9. Cool and enjoy: Let coated donuts cool completely on wire rack before serving.

Notes

Don’t skip reducing the cider—it concentrates the apple flavor. Use room temperature ingredients for best results. Pipe batter for cleaner donuts. Coat while warm for best sugar adhesion. Store uncoated donuts in an airtight container for up to 2 days; coat fresh when ready to eat. Freeze uncoated donuts for up to 3 months.
