Instructions

  1. Grate 8 oz of sharp cheddar cheese on the large holes of a box grater. Set aside.
  2. Let 4 oz of cream cheese sit at room temperature for about 20 minutes to soften. If needed, microwave for 10-15 seconds until soft but not melted.
  3. Pour 12 oz of beer into a medium saucepan. Bring to a gentle simmer over medium-high heat and cook for 3-4 minutes to mellow the flavor and reduce slightly.
  4. In a separate small skillet, melt 1 tablespoon of butter over medium heat. Whisk in 1 tablespoon of flour and cook for 1 minute, stirring constantly, until a pale golden paste forms (do not let it brown).
  5. Reduce the heat under the beer to low. Whisk the roux into the simmering beer until completely smooth.
  6. Add the softened cream cheese in chunks, whisking continuously until fully melted and smooth (about 2 minutes).
  7. Stir in 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon smoked paprika (if using), 1/2 teaspoon Dijon mustard, and 1/4 teaspoon cayenne (if using). Whisk to combine.
  8. Remove the saucepan from the heat. Add the grated cheddar in small handfuls (about 1/4 cup at a time), stirring vigorously after each addition until mostly melted before adding the next (about 3-4 minutes total).
  9. Adjust consistency: if too thick, whisk in a tablespoon of milk or extra beer; if too thin, let sit over low heat for 1 minute, stirring constantly.
