  • 2 cups cooked chicken, shredded or finely chopped
  • ½ cup buffalo wing sauce (e.g., Frank’s RedHot Original)
  • 4 ounces cream cheese, softened
  • ½ cup shredded cheddar cheese
  • 1 tablespoon dry ranch dressing mix
  • 2 tablespoons green onions, finely chopped
  • ¼ cup baking soda
  • 8 cups water
  • 1 large egg, beaten
  • Coarse sea salt, for sprinkling
  • 3 tablespoons butter, melted

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat and set it aside.
  2. Make the buffalo chicken filling: In a medium bowl, combine the shredded chicken, buffalo wing sauce, softened cream cheese, shredded cheddar, ranch dressing mix, and chopped green onions. Stir until everything is well combined and creamy. Set aside.
  3. Prepare the dough: On a lightly floured surface, roll out the pizza dough into a rectangle, about 12 by 8 inches. Cut the dough into 24 equal squares (roughly 2-inch squares).
  4. Fill the dough squares: Place about 1 heaping teaspoon of the buffalo chicken filling in the center of each dough square.
  5. Seal the pretzel bites: Gently stretch the corners of each dough square up and over the filling, pinching the edges together to seal. Roll each one gently between your palms to form a smooth ball. Make sure the seams are completely sealed.
  6. Boil the water and baking soda: In a large pot, bring 8 cups of water to a rolling boil. Carefully add the ¼ cup of baking soda. Stir until dissolved.
  7. Boil the pretzel bites: Working in batches of 6 to 8, carefully drop the sealed pretzel bites into the boiling water. Boil for 30 seconds, then flip and boil for another 30 seconds (total 1 minute per batch). Remove with a slotted spoon and place on the prepared baking sheet, spacing them about 1 inch apart.
  8. Brush with egg wash: In a small bowl, beat the egg with 1 tablespoon of water. Brush the beaten egg over the top of each pretzel bite. Sprinkle each bite with a pinch of coarse sea salt.
  9. Bake the pretzel bites: Place the baking sheet in the preheated oven and bake for 12 to 15 minutes, or until deep golden brown and puffed up.
  10. Brush with melted butter: As soon as the pretzel bites come out of the oven, brush them generously with the melted butter. Let them cool on the baking sheet for 5 minutes before serving.

Notes

Do not skip the baking soda bath—it gives pretzels their signature chewy texture and dark crust. Seal the edges well to prevent filling from leaking. Use room temperature cream cheese for easier mixing. Brush with butter immediately after baking for best flavor.
