A hearty, one-pan meal featuring crispy potatoes, seasoned ground beef, and a golden, melty cheese topping. Perfect for weeknight dinners or feeding a crowd.

Ingredients

Scale
  • 1.5 pounds (680g) ground beef (80/20 works best for flavor; drain excess fat)
  • 4 medium Yukon Gold potatoes, thinly sliced (about 1/8 inch thick)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 2 cups (200g) shredded sharp cheddar cheese
  • 1 cup (100g) shredded Monterey Jack cheese
  • 1/4 cup (25g) grated Parmesan cheese (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1 green onion, sliced thin (for garnish)

Instructions

  1. Wash and thinly slice potatoes (about 1/8 inch thick). Dice onion and mince garlic. Shred cheese if using blocks.
  2. Heat a 12-inch cast iron skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned (6-8 minutes). Leave about 1 tablespoon of fat in the pan. Remove beef with a slotted spoon and set aside.
  3. In the same skillet, add olive oil. Sauté diced onion for 3-4 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  4. Spread onion and garlic mixture evenly across the bottom of the skillet. Arrange half of the potato slices in a single, overlapping layer over the onions. Sprinkle with half the salt, pepper, smoked paprika, and oregano.
  5. Spread cooked ground beef evenly over the first potato layer. Top with remaining potato slices in an even layer. Sprinkle with remaining spices.
  6. Cover the skillet with a lid or tightly sealed foil. Reduce heat to medium-low and cook for 20 minutes. Check if potatoes are tender; if not, cook for another 5 minutes.
  7. Remove lid. Sprinkle shredded cheddar and Monterey Jack evenly over the top. Add Parmesan if using. Increase heat to medium-high and cook uncovered for 3-5 minutes until cheese is melted and bubbly and potato edges are crispy.
  8. Remove from heat. Let rest for 2-3 minutes. Garnish with fresh parsley and green onion. Serve directly from the skillet.

Notes

For best results, use Yukon Gold potatoes and 80/20 ground beef. Arrange potatoes in even, overlapping layers. Don’t rush the cooking; keep heat at medium-low to avoid burning. Let the dish rest before serving for cleaner slices. Can be assembled ahead (minus cheese) and finished in the oven at 375°F for 20-25 minutes.
