These crispy bacon-wrapped jalapeño popper bites are smoky, creamy, spicy (but not too spicy), and wrapped in bacon that gets perfectly crisp in the oven. No deep frying, no complicated steps—just a little patience and a lot of flavor.

  • 68 large fresh jalapeños
  • 8 oz cream cheese, softened
  • ½ cup sharp cheddar cheese, shredded
  • 1216 slices thin-cut bacon
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • Salt and black pepper to taste
  • Optional: chopped fresh chives or green onions for garnish
  • Optional: ranch or blue cheese dressing for dipping

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil, and place a wire rack on top if you have one.
  2. Cut each jalapeño in half lengthwise. Use a small spoon to scrape out the seeds and white membranes.
  3. In a small bowl, combine the softened cream cheese, shredded cheddar, garlic powder, onion powder, and a pinch of salt and pepper. Mix until well combined and smooth.
  4. Using a small spoon or spatula, fill each jalapeño half with the cream cheese mixture. Don’t overstuff them—the filling should be level with the cut edge.
  5. Cut each bacon slice in half crosswise. Take one half-slice and wrap it around each filled jalapeño half, overlapping the ends slightly on the bottom (the cut side).
  6. Place each wrapped jalapeño popper bite on the wire rack, seam-side down. Leave a little space between each one.
  7. Bake for 20-25 minutes, until the bacon is golden brown and crispy and the filling is bubbly around the edges. At the 15-minute mark, check and rotate the pan if needed.
  8. Remove from the oven and let the jalapeño popper bites rest on the rack for about 5 minutes.
  9. Transfer to a serving platter, garnish with chopped chives or green onions if desired, and serve warm.

Notes

Use thin-cut bacon for best results. A wire rack is key for crispy bacon all around. Let the bites rest for 5 minutes after baking to avoid burning your mouth. You can assemble up to 24 hours in advance and refrigerate; add 5 extra minutes to baking time if starting from cold.
