  • 3 tablespoons light brown sugar, packed
  • 2 tablespoons unsalted butter, melted
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground cinnamon (optional)
  • A few cracks of black pepper (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Place a rack in the middle position.
  2. Wash the honeynut squash well and pat dry. Using a sharp chef’s knife, carefully cut off the stem end and the tip. Cut the squash in half lengthwise. Use a spoon to scoop out the seeds and stringy bits. Slice each half into ½-inch thick half-moons.
  3. In a small bowl, combine 3 tablespoons packed light brown sugar, ½ teaspoon kosher salt, and ¼ teaspoon ground cinnamon (if using). Stir with a fork to break up any clumps. Set aside.
  4. Line a baking sheet with parchment paper. Lay the squash slices in a single layer, making sure they don’t overlap.
  5. Melt 2 tablespoons of unsalted butter. Using a pastry brush or the back of a spoon, brush the melted butter over each slice of squash, coating both sides if possible.
  6. Sprinkle the brown sugar mixture evenly over the squash slices.
  7. Roast for 20-25 minutes, until the squash is fork-tender and the edges are bubbling and caramelized. For deeper caramelization, give it another 3-5 minutes, watching carefully to prevent burning.
