  • 2 tablespoons unsalted butter (28g), melted
  • 2 tablespoons granulated sugar (25g)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 cups water (480ml) for boiling

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat and set aside.
  2. Rinse the pumpkin seeds thoroughly under cold running water in a colander. Use your fingers to gently rub off any remaining pumpkin strings or pulp. Pat them dry with a clean kitchen towel or paper towels.
  3. Bring 2 cups of water to a boil in a medium saucepan. Once bubbling, add the cleaned pumpkin seeds. Boil for exactly 10 minutes.
  4. Drain the seeds in a colander and rinse briefly with cold water to stop the cooking process. Shake off as much water as possible, then spread them out on a clean kitchen towel and pat dry.
  5. In a medium mixing bowl, combine the melted butter, granulated sugar, ground cinnamon, and salt. Stir until the sugar and cinnamon are fully incorporated into the butter, forming a thick paste.
  6. Add the boiled and dried pumpkin seeds to the bowl. Toss with a spatula or spoon until every seed is evenly coated.
  7. Spread the coated seeds in a single layer on the prepared baking sheet. Try not to overlap them too much.
  8. Roast for 12-15 minutes, stirring halfway through at the 7-minute mark. The seeds are done when golden brown and fragrant.
  9. Let the seeds cool completely on the baking sheet (at least 15 minutes). They will continue to crisp up as they cool.
