Ingredients

Scale
  • 8 ounces Brie cheese
  • 4 ounces Aged Manchego
  • 4 ounces Blue cheese (Gorgonzola or Roquefort)
  • 4 ounces Prosciutto
  • 4 ounces Salami (Genoa or Soppressata)
  • 68 Fresh figs
  • 1 large Honeycrisp apple
  • 1/2 cup Dried apricots or dates
  • 1/2 cup Toasted almonds (Marcona or roasted salted)
  • 1/2 cup Candied pecans or walnuts
  • 1/2 cup Pumpkin seeds (pepitas)
  • 1/4 cup High-quality honey
  • 1/4 cup Fig jam or preserves
  • Optional: Whole grain mustard or honey mustard
  • 1 small baguette
  • Assorted crackers
  • Fresh rosemary sprigs (garnish)
  • Fresh thyme sprigs (garnish)
  • Edible flowers (pansies or nasturtiums, optional)
  • Flaky sea salt (Maldon, garnish)

Instructions

  1. Start with the bowls. Place small ramekins of honey, fig jam, and mustard on the board at different points.
  2. Place the cheeses next. Unwrap the brie and place it whole on the board. Slice the manchego into thin triangles and fan them out. Crumble or wedge the blue cheese nearby.
  3. Add the meats. Fold prosciutto into loose ribbons or rosettes and place in small piles. Fold salami slices in half and arrange in a fan or overlapping stack near the cheeses.
  4. Fill in with fruit. Halve figs lengthwise and arrange cut-side up in small clusters. Fan apple slices in a small overlapping row. Scatter dried apricots or dates in small piles.
  5. Add the crunch. Scatter almonds, candied pecans, and pumpkin seeds in small piles around the board, filling gaps between larger items.
  6. Arrange the bread and crackers. Place baguette slices in a small stack or fan near one edge. Arrange crackers in small clusters around the board.
  7. Garnish and finish. Tuck small sprigs of rosemary and thyme throughout the board. Sprinkle flaky sea salt over the brie and fig halves. Drizzle a little honey over the brie and figs if desired.

Notes

Let cheese come to room temperature before serving for best flavor. Prep all components before arranging. Don’t overcrowd the board; leave some negative space. For best results, assemble no more than 2-3 hours before serving. Store leftovers separately.
