  • 1/2 cup cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1/2 cup shelled pistachios, finely chopped
  • 1/2 cup dried cranberries, finely chopped
  • 1 teaspoon vanilla extract
  • 12 ounces white chocolate melting wafers
  • 1 tablespoon coconut oil or shortening
  • Lollipop sticks (4-inch)
  • Optional: red and green sprinkles, crushed pistachios, or edible glitter for decoration

Instructions

  1. Bake the vanilla cake according to package directions in a 9×13 inch pan. Let cool completely.
  2. Crumble the cooled cake into fine crumbs in a large mixing bowl.
  3. In a separate bowl, beat together cream cheese, butter, powdered sugar, and vanilla extract until smooth. Fold into cake crumbs along with chopped pistachios and dried cranberries. Mix until mixture holds its shape when squeezed.
  4. Using a 1-tablespoon cookie scoop, portion mixture and roll into smooth balls. Place on a parchment-lined baking sheet. Refrigerate for at least 2 hours or overnight until firm.
  5. Melt white chocolate wafers and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  6. Dip the tip of a lollipop stick into melted chocolate, then insert halfway into a cake ball. Dip the entire cake ball into the chocolate, tap off excess, and place in a Styrofoam block to set.
  7. While coating is wet, decorate with sprinkles, crushed pistachios, or drizzle. Let set at room temperature for 30 minutes or refrigerate for 15 minutes.
  8. Serve at room temperature. Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.
