This isn’t a ‘healthy’ bread that tastes like a sad, dense brick. It’s a full-on, decadent, melt-in-your-mouth chocolate experience that just happens to have a secret vegetable hiding inside.

Ingredients

  • 1 ½ cups (190g) all-purpose flour
  • ½ cup (45g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) packed light brown sugar
  • ½ cup (120ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) buttermilk
  • 1 ½ cups grated zucchini (about 1 medium zucchini)
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper, leaving overhang on the long sides.
  2. Wash zucchini, trim ends, and grate on the large holes of a box grater. Gently squeeze out excess moisture with hands or a clean towel.
  3. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  4. In a separate larger bowl, whisk together granulated sugar and brown sugar. Add oil, eggs, and vanilla extract; whisk until smooth and glossy, about 1 minute.
  5. Add buttermilk and whisk until just combined.
  6. Pour dry ingredients into wet ingredients; fold with a rubber spatula until just combined (a few lumps are okay).
  7. Fold in grated zucchini and chocolate chips until evenly distributed.
  8. Pour batter into prepared loaf pan and spread evenly. Bake for 50-60 minutes, until a toothpick inserted in the center comes out with a few moist crumbs. Tent with foil after 40 minutes if browning too quickly.
  9. Cool in pan on a wire rack for 15 minutes, then lift out using parchment and cool completely on the rack before slicing.

Notes

Squeeze zucchini well to avoid a gummy loaf. Do not over-mix the batter. Let the bread cool completely before slicing for best texture. For muffins, bake at 350°F for 18-22 minutes.
