Instructions

  1. Cut 1 cup (227g) unsalted butter into cubes and melt over medium heat in a heavy-bottomed saucepan, stirring constantly until the butter foams and milk solids turn golden brown with a nutty aroma. Remove from heat and transfer to a heatproof bowl to cool for about 5 minutes.
  2. Add 3/4 cup (150g) granulated sugar and 3/4 cup (165g) packed brown sugar to the browned butter. Beat with an electric mixer or wooden spoon until combined and slightly fluffy.
  3. Add 1 large room temperature egg and 1 teaspoon vanilla extract. Mix until smooth and glossy.
  4. In a separate bowl, whisk together 2 1/4 cups (280g) all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding by hand until just combined. Avoid overmixing.
  6. Fold in 1 1/2 cups (270g) mixed semi-sweet and milk chocolate chunks.
  7. Optional: Cover dough with plastic wrap and chill in the refrigerator for 30-60 minutes to improve flavor and prevent spreading.
  8. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  9. Scoop dough by rounded tablespoons onto baking sheets, spacing about 2 inches apart.
