  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon
  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • ¾ cup (150g) granulated or brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (170g) semi-sweet or dark chocolate chips
  • ½ cup sea salt caramel sauce (homemade or store-bought)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5-inch loaf pan and line it with parchment paper if desired.
  2. Shred the zucchini finely using a box grater or food processor. Place shredded zucchini in a clean kitchen towel and squeeze out excess moisture.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set aside.
  4. In a separate bowl, mash the bananas until smooth. Add melted butter, sugar, eggs, and vanilla extract. Whisk gently until combined.
  5. Fold the shredded zucchini and chocolate chips into the wet mixture.
  6. Pour the wet ingredients into the dry ingredients and fold gently with a spatula until no dry streaks remain. Do not overmix.
  7. Pour half the batter into the prepared pan. Drizzle half of the caramel sauce over the batter and swirl gently with a butter knife or skewer. Repeat with remaining batter and caramel.
  8. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Tent with foil if top browns too quickly.
  9. Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

Drain zucchini well to avoid soggy bread. Do not overmix batter to keep crumb tender. Use very ripe bananas for natural sweetness. Swirl caramel gently for marbled effect. Test for doneness starting at 50 minutes. Cool completely before slicing. Optional: add chopped walnuts for crunch or substitute ingredients for gluten-free or vegan versions.
