  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can corn (or frozen corn), drained
  • 1 (10-ounce) can diced tomatoes with green chilies (like Rotel), undrained
  • 1 (1-ounce) packet taco seasoning
  • 3 cups beef broth (or chicken broth)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it up with a wooden spoon, until fully cooked (6-8 minutes). Drain excess fat if desired.
  2. Transfer the browned beef to a 6-quart slow cooker using a slotted spoon.
  3. Add the drained and rinsed black beans, drained corn, and undrained can of diced tomatoes with green chilies to the slow cooker.
  4. Sprinkle the taco seasoning over the ingredients and pour in the beef broth. Stir well to combine.
  5. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  6. Taste and adjust seasoning if needed (add salt, more heat, or a squeeze of lime juice).
  7. Serve hot in bowls with desired toppings (shredded cheese, sour cream, cilantro, tortilla chips, etc.).

Notes
