  • ½ cup (115g) unsalted butter, browned
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) brown sugar
  • 2 large eggs, room temperature
  • 1¾ cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ¾ cup (90g) chopped walnuts, toasted
  • 3 tablespoons honey
  • 1 tablespoon milk (any kind)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5 inch loaf pan or line it with parchment paper with an overhang for easy lifting.
  2. Brown the butter: Melt ½ cup unsalted butter in a light-colored skillet over medium heat, stirring frequently until golden brown and nutty, about 5-7 minutes. Remove from heat and let cool slightly.
  3. Toast the walnuts in the same skillet over medium heat for 3-5 minutes until fragrant and lightly browned. Stir often to avoid burning. Set aside to cool.
  4. In a large bowl, whisk together the browned butter, granulated sugar, and brown sugar until combined. Add eggs one at a time, beating well after each addition.
  5. Stir in mashed bananas and vanilla extract until well mixed.
  6. In a separate bowl, sift together the flour, baking soda, and salt.
  7. Add the dry ingredients to the wet ingredients in three parts, folding gently with a spatula until just combined. Avoid overmixing.
  8. Fold in the toasted walnuts, reserving a small handful to sprinkle on top.
  9. Pour the batter into the prepared loaf pan and sprinkle reserved walnuts on top.
  10. Bake for 55-65 minutes, starting to check at 50 minutes with a toothpick inserted in the center; it should come out with a few moist crumbs but no wet batter.
  11. While baking, whisk together honey and milk in a small bowl to prepare the glaze.
  12. When the bread is done, remove from oven and immediately brush the honey glaze over the top for a sticky, shiny finish.
  13. Let the bread cool in the pan for 15 minutes, then transfer to a cooling rack to cool completely before slicing.
