This cozy brown butter sage cornbread dressing is the ultimate holiday side dish, featuring nutty brown butter, fragrant sage, and tender-yet-crispy cornbread. It’s quick, easy, and perfect for Thanksgiving, Christmas, or any cozy fall gathering.

Ingredients

Scale
  • 6 cups crumbled cornbread (day-old or slightly stale)
  • 1/2 cup unsalted butter
  • 1 large yellow onion, diced (about 1 1/2 cups)
  • 3 celery stalks, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1/4 cup fresh sage leaves, chopped (about 10–12 large leaves)
  • 2 cups low-sodium chicken or vegetable broth
  • 2 large eggs, lightly beaten
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Make the brown butter: In a large skillet over medium heat, melt the 1/2 cup of butter. Swirl the pan occasionally as it melts. After about 3-4 minutes, the butter will start to foam and you’ll see brown specks forming at the bottom. Once it smells nutty and has turned a golden-amber color (about 5-6 minutes total), immediately remove it from the heat and pour it into a heat-safe bowl to stop the cooking.
  3. Sauté the aromatics: In the same skillet, add the diced onion and celery. Cook over medium heat for 5-7 minutes until softened and translucent. Add the minced garlic and cook for 1 more minute until fragrant. Remove from heat.
  4. Toast the sage: Add the chopped fresh sage to the skillet with the vegetables and stir for about 30 seconds. The residual heat will wake up the sage’s oils.
  5. Combine the base: In a large mixing bowl, add the crumbled cornbread. Pour the brown butter over it and toss gently with a spatula to coat.
  6. Add the vegetables and seasonings: Add the sautéed onion, celery, garlic, and sage to the bowl. Sprinkle with salt, pepper, and dried thyme. Toss everything together until well combined.
  7. Add the broth and eggs: In a small bowl or measuring cup, whisk together the broth and beaten eggs. Pour this mixture over the cornbread mixture and fold gently with a spatula until everything is evenly moistened. The mixture should look like a thick, scoopable batter—not soupy, but not dry either. If it seems too dry, add an extra 1/4 cup of broth.
  8. Transfer to the baking dish: Pour the mixture into your prepared baking dish and spread it into an even layer. Don’t press it down.
  9. Bake to perfection: Bake for 30-35 minutes until the top is golden brown and the edges are crispy. The center should be set but still slightly jiggly. For extra crispy edges, broil for 1-2 minutes at the end—but watch it like a hawk!
  10. Rest before serving: Let the dressing rest for 5-10 minutes before serving.

Notes

For the best texture, use day-old cornbread. If using fresh, spread cubes on a baking sheet and bake at 300°F for 10-15 minutes to dry them out. Don’t overmix to avoid a dense texture. Let the dressing rest after baking for easier serving. For extra crispy edges, broil for 1-2 minutes at the end.
