Ingredients

  • All-purpose flour – about 1 cup (125g), sifted
  • Granulated sugar – 2 tablespoons
  • Baking powder – 1 teaspoon
  • Salt – 1/4 teaspoon
  • Egg – 1 large, room temperature
  • Milk – 3/4 cup (180ml), whole or 2% (or almond milk for dairy-free)
  • Unsalted butter – 2 tablespoons, melted and cooled
  • Vanilla extract – 1 teaspoon
  • Strawberries – hulled and halved
  • Seedless grapes – red or green
  • Pineapple chunks – fresh or canned in juice, drained
  • Kiwi – peeled and sliced into rounds
  • Blueberries – washed and dried
  • Wooden or bamboo skewers (soaked in water for 15 minutes if toasting)
  • Optional toppings: maple syrup or honey for drizzling
  • Optional toppings: Greek yogurt or whipped cream for dipping
  • Optional toppings: chopped nuts or shredded coconut for texture

Instructions

  1. Prepare the Pancake Batter (10 minutes): In a medium bowl, whisk together 1 cup sifted all-purpose flour, 2 tablespoons sugar, 1 teaspoon baking powder, and 1/4 teaspoon salt until combined. In a separate bowl, beat 1 large egg with 3/4 cup milk, 2 tablespoons melted butter, and 1 teaspoon vanilla extract. Slowly pour wet ingredients into dry, whisk gently until just combined. Let batter rest for 5 minutes.
  2. Cook Mini Pancakes (15 minutes): Heat a nonstick skillet or griddle over medium heat. Lightly grease with butter or oil. Using a teaspoon or small scoop, pour batter to form mini pancakes about 2 inches wide. Cook 1–2 minutes until bubbles form and edges set, then flip and cook another 1–2 minutes until golden. Keep warm in a low oven if needed.
  3. Prepare Fruit Skewers (10 minutes): Thread fresh fruit onto soaked wooden skewers in an appealing pattern, alternating colors and textures. Cut larger fruit into bite-sized pieces.
  4. Assemble the Grazing Board (5 minutes): Arrange mini pancakes and fruit skewers on a large serving board. Add small bowls of maple syrup, honey, Greek yogurt, or whipped cream for dipping or drizzling. Sprinkle chopped nuts or shredded coconut over pancakes if desired.
  5. Final Touches: Ensure the board looks inviting with warm pancakes and colorful fruit. Serve immediately for best freshness.

Notes

Do not overmix the batter; lumps are okay. Use medium heat for cooking pancakes to avoid burning. Let batter rest for 5 minutes before cooking. Keep cooked pancakes warm in a 200°F oven if making in batches. Soak skewers before toasting to prevent burning. For gluten-free, substitute flour with gluten-free blend or almond flour. For dairy-free, use plant-based milk and coconut oil instead of butter.
