Cozy Campfire Banana Boat Smores - featured image

A quick and easy campfire treat combining ripe bananas stuffed with peanut butter, marshmallows, and chocolate, perfect for outdoor gatherings or indoor baking.

Ingredients

Scale
  • 2 ripe but firm bananas
  • 1/4 cup creamy peanut butter
  • 1 cup mini marshmallows or regular marshmallows cut into smaller pieces
  • 1/2 cup semisweet chocolate chips or chopped chocolate bars
  • Optional toppings: chopped nuts (pecans or walnuts), shredded coconut, drizzle of honey
  • Heavy-duty aluminum foil for wrapping

Instructions

  1. Preheat your cooking method: oven to 350°F (175°C) or prepare a campfire with medium heat and glowing embers.
  2. Slice each banana lengthwise, creating a pocket but leaving about 1/2 inch intact so the banana holds together.
  3. Spoon about 2 tablespoons of creamy peanut butter into the banana pocket.
  4. Fill the banana boats with about 1/2 cup of mini marshmallows and sprinkle the chocolate chips or chopped chocolate evenly on top.
  5. Wrap each banana boat securely in heavy-duty aluminum foil, folding edges tightly to prevent leaks.
  6. Place the foil packets on the hot embers or in the oven and cook for 10-15 minutes, rotating halfway if using a campfire.
  7. Remove the packets using tongs or oven mitts and let cool for a couple of minutes before unwrapping.
  8. Serve warm, optionally garnished with chopped nuts, shredded coconut, or a drizzle of honey.

Notes

Use ripe but firm bananas to avoid mushiness. Wrap foil tightly to trap steam and ensure even melting. Rotate packets on the fire every 5-7 minutes to prevent burning. Optional toppings add texture and flavor contrast. Can be made vegan or nut-free with substitutions.
