Ingredients

Scale
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, cut into pieces
  • 1/2 cup heavy cream, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon flaky sea salt
  • 6 medium apples, peeled, cored, and sliced into 1/4-inch thick slices (mix of Honeycrisp and Granny Smith)
  • 1/4 cup brown sugar, packed
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, melted and slightly cooled

Instructions

  1. Make the caramel sauce: Place granulated sugar in a medium saucepan over medium heat. Let it melt without stirring for 3-4 minutes until edges turn amber. Gently swirl the pan until all sugar is melted and deep amber. Remove from heat. Add butter pieces one at a time, whisking constantly. Slowly pour in heavy cream while whisking. Stir in vanilla and flaky sea salt. Set aside to cool slightly.
  2. Preheat oven to 375°F (190°C). Peel, core, and slice apples into 1/4-inch thick slices.
  3. In a large bowl, combine sliced apples, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Toss until coated. Let sit for 5 minutes.
  4. Make the oatmeal streusel topping: In a medium bowl, combine rolled oats, flour, brown sugar, chopped pecans (if using), cinnamon, and salt. Stir with a fork. Pour melted butter over and mix until mixture looks like wet sand with clumps.
  5. Spread apple mixture evenly into a greased 9×13-inch baking dish. Pour about two-thirds of the caramel sauce over the apples. Gently fold to distribute.
  6. Sprinkle oatmeal streusel topping evenly over the apples. Do not press down.
  7. Bake for 35-40 minutes, until topping is golden brown and filling is bubbling. If topping browns too quickly, tent with foil after 25 minutes.
  8. Let cool on a wire rack for at least 15 minutes. Drizzle reserved caramel sauce over the top before serving.

Notes

For best results, toast oats and nuts before making streusel to keep topping crunchy. Use room temperature cream to prevent caramel from seizing. Let crisp rest 15-20 minutes before serving to allow filling to set.
