  • 2 Cups Sharp Cheddar Cheese, shredded
  • 1 Cup Whole Milk or Half-and-Half
  • 2 Tablespoons Unsalted Butter
  • 2 Tablespoons All-Purpose Flour
  • 1 Tablespoon Worcestershire Sauce
  • 1 Teaspoon Ketchup
  • Salt and Black Pepper to taste

Instructions

  1. Brown the Beef (10 minutes): Place a large skillet over medium-high heat. Add the ground beef and break it up with a wooden spoon. Cook, stirring occasionally, until completely browned and no longer pink. Leave about a tablespoon of fat in the pan for flavor. Transfer the cooked beef to a 6-quart or larger slow cooker.
  2. Sauté the Aromatics (5 minutes): Return the skillet to medium heat. Add the diced onion and cook for 2-3 minutes until it starts to soften. Add the minced garlic and cook for another 30 seconds until fragrant. Scrape everything into the slow cooker with the beef.
  3. Build the Base (5 minutes): To the slow cooker, add the beef broth, undrained diced tomatoes, diced potatoes, Worcestershire sauce, and ketchup. Stir well to combine.
  4. Slow Cook (4-6 hours): Place the lid on the slow cooker. Cook on LOW for 5-6 hours or on HIGH for 3-4 hours, until the potatoes are fork-tender.
  5. Make the Thickener (5 minutes): About 30 minutes before serving, melt the 2 tablespoons of butter in a small saucepan over medium heat. Whisk in the 2 tablespoons of flour and cook for 1-2 minutes, stirring constantly. Slowly whisk in 1 cup of hot broth from the slow cooker, a little at a time, until you have a smooth, thick paste (slurry).
  6. Finish the Soup (15 minutes): Pour the flour slurry into the slow cooker and stir well to combine. Stir in the milk or half-and-half. Add the shredded cheddar cheese one handful at a time, stirring until completely melted after each addition. Let the soup cook for another 10-15 minutes on LOW to heat through.
  7. Season and Serve (5 minutes): Taste the soup and add salt and pepper as needed. Ladle into bowls and top with desired toppings like dill pickle slices, crispy bacon, and extra cheddar. Serve immediately.

Notes

For best results, shred your own cheddar cheese from a block to avoid graininess. Add dairy and cheese at the end to prevent curdling. Taste before adding extra salt as broth, Worcestershire sauce, and cheese contain sodium. For a thicker soup, increase the flour slurry to 3 tablespoons each of butter and flour.
