  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (90 g) rainbow sprinkles (jimmies recommended)
  • Optional: 1/2 cup (90 g) semi-sweet chocolate chips or white chocolate chunks

Instructions

  1. Preheat your oven to 350°F (175°C). Place your cast iron skillet in the oven as it preheats to warm it slightly (about 5 minutes).
  2. In a large bowl, beat the softened unsalted butter with brown sugar and granulated sugar until light and fluffy, about 3–4 minutes.
  3. Beat in the eggs one at a time, followed by the vanilla extract until the mixture is glossy and thick.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined to avoid overmixing.
  6. Gently fold in the rainbow sprinkles using a rubber spatula to keep them vibrant and prevent bleeding.
  7. Spoon the dough into the warmed skillet, spreading it evenly to about 1-inch thickness without pressing down too much.
  8. Bake for 25–30 minutes until the edges are golden and set, and the center is soft and slightly gooey. Check at 25 minutes with a toothpick; it should come out with a few moist crumbs.
  9. Let the cookie cool in the skillet for 10 minutes before serving.
