Cozy Kielbasa and White Bean Soup – An Easy Winter Dinner

This hearty and comforting soup features smoky kielbasa, tender white beans, and a savory broth. It’s a quick and easy weeknight meal that tastes like it simmered all day.

Ingredients

  • 12 ounces kielbasa, sliced into ½-inch rounds
  • 2 cans (15 ounces each) cannellini or great northern beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • ¼ cup fresh parsley, chopped
  • Optional: 1 Parmesan rind

Instructions

  1. Brown the Kielbasa: Heat a large Dutch oven over medium-high heat. Add the sliced kielbasa in a single layer and cook undisturbed for 2-3 minutes until deeply browned. Flip and cook for another 2 minutes. Transfer to a plate and set aside.
  2. Sauté the Aromatics: Reduce heat to medium. If the pot is dry, add olive oil. Add onion, carrots, and celery. Cook for 5 minutes, stirring occasionally, until softened. Add garlic and cook for 1 minute more.
  3. Add Beans and Broth: Stir in the drained beans, chicken broth, thyme, bay leaf, and a pinch of salt and pepper. Add Parmesan rind if using. Bring to a boil.
  4. Simmer the Soup: Reduce heat to low, cover with lid slightly ajar, and simmer for 20-25 minutes until carrots are tender and broth is slightly creamy.
  5. Return the Kielbasa: Stir the browned kielbasa back into the pot and heat through for 2 minutes. Adjust seasoning to taste.
  6. Finish and Serve: Remove bay leaf and Parmesan rind. Ladle into bowls and garnish with fresh parsley. Serve hot.

Notes

For a creamier texture, mash about a cup of the beans against the side of the pot before adding the kielbasa back in. If the soup tastes flat, add a squeeze of lemon juice or a dash of vinegar. This soup is even better the next day.
