Cozy Lasagna Soup with Creamy Ricotta

This cozy lasagna soup delivers all the comfort of traditional lasagna without the fuss. With a rich tomato broth, broken lasagna noodles, and a creamy ricotta dollop, it’s a one-pot wonder that comes together in under an hour.

  • 1 tablespoon olive oil
  • 1 pound ground beef (80/20)
  • 1 large yellow onion, diced (about 1 ½ cups)
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 6 cups low-sodium chicken broth
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (15 ounces) tomato sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon sugar
  • 8 ounces lasagna noodles, broken into 2-inch pieces
  • 1 ½ cups whole milk ricotta cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • 1 clove garlic, minced (optional)
  • Fresh basil leaves, for garnish
  • Extra Parmesan cheese, for serving
  • Crusty bread or garlic bread, for serving

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Add ground beef and cook, breaking it up, until browned all over, about 6-8 minutes. Transfer meat to a plate, leaving about 2 tablespoons of drippings in the pot.
  2. Reduce heat to medium. Add diced onion and cook, stirring occasionally, until softened and translucent, about 4-5 minutes. Add minced garlic, dried oregano, dried basil, and red pepper flakes (if using). Cook for 30 seconds until fragrant.
  3. Return browned beef to the pot. Add crushed tomatoes, tomato sauce, tomato paste, chicken broth, and sugar. Stir to combine. Bring to a boil, then reduce heat to low and simmer uncovered for 15 minutes. Season with salt and pepper to taste.
  4. While broth simmers, break lasagna noodles into 2-inch pieces. Add broken noodles to the simmering broth and stir gently. Cook for 10-12 minutes, stirring occasionally, until noodles are tender but still al dente.
  5. In a small bowl, combine ricotta cheese, grated Parmesan, chopped parsley, chopped basil, and minced garlic (if using). Season with salt and pepper. Stir until smooth.
  6. Taste soup and adjust seasoning. If desired, stir in a splash of heavy cream or a pat of butter for richness. Thin with additional broth if needed.
  7. Ladle hot soup into bowls. Top each serving with a generous dollop of ricotta mixture (about 2-3 tablespoons). Garnish with torn fresh basil and extra Parmesan. Serve immediately with crusty bread.

Notes

For best texture, use whole milk ricotta. Cook noodles to just barely al dente as they will continue to cook in the hot broth. For meal prep, cook noodles separately and add to individual servings to prevent mushiness. Soup tastes even better the next day as flavors meld.
