  • 2 tablespoons unsalted butter, melted
  • Coarse sea salt or pretzel salt
  • 1/3 cup whole-grain mustard
  • 1/3 cup sweet hot mustard
  • 1/3 cup spicy brown mustard
  • 8 ounces thick-cut smoked bratwurst or knockwurst, sliced into 1/2-inch rounds
  • 6 ounces thinly sliced prosciutto or speck
  • 4 ounces salami sticks or landjäger
  • 6 ounces aged cheddar, cubed
  • 6 ounces smoked gouda, sliced
  • 4 ounces brie or triple-cream cheese
  • 1 cup cornichons or small pickles
  • 1/2 cup pickled red onions
  • 1 cup seedless red grapes
  • 1/2 cup roasted almonds or beer nuts
  • Fresh dill or parsley sprigs for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Arrange pretzels on a baking sheet, brush with melted butter, and sprinkle with coarse salt. Warm for 5–7 minutes until soft and slightly crisp.
  2. During the last 3 minutes of pretzel warming, add sliced bratwurst or knockwurst to the baking sheet to warm gently.
  3. Spoon each mustard into its own small bowl and arrange in a triangle near the center of a large serving board.
  4. Cube aged cheddar into 1-inch pieces, slice smoked gouda into thin wedges, and cut brie into slices or leave whole. Place cheese clusters around the board.
  5. Fold prosciutto into loose ribbons and arrange in a pile. Place salami sticks or landjäger in a separate cluster. Add warm bratwurst slices near the mustards.
  6. Scatter cornichons, pickled red onions, grapes, and almonds around the board, filling gaps.
  7. Place warm pretzels near the mustards, slightly overlapping.
  8. Garnish with fresh dill or parsley sprigs. Serve immediately while pretzels are warm.

Notes

For best flavor, buy pretzels the same day. If you can’t find sweet hot mustard, mix equal parts whole-grain mustard and honey. For a vegetarian version, skip meats and double the cheese, adding roasted vegetables. Let cheese come to room temperature before serving for best texture. Keep extra mustard on hand as it disappears quickly.
