Creamy, peanut-buttery overnight oats packed with protein for a satisfying grab-and-go breakfast. This easy recipe takes just 5 minutes to prep and tastes like dessert for breakfast.

  • 1 cup (90g) rolled oats (old-fashioned oats)
  • 1 cup (240ml) milk of choice (whole milk, oat milk, or almond milk)
  • 1/4 cup (64g) creamy peanut butter
  • 1 scoop (about 30g) vanilla protein powder
  • 12 tablespoons (15-30ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • Optional toppings: sliced banana, chocolate chips, chopped peanuts, extra peanut butter drizzle, sea salt

Instructions

  1. In a small bowl or liquid measuring cup, whisk together 1 cup milk, 1/4 cup creamy peanut butter, 1 scoop vanilla protein powder, 1-2 tablespoons maple syrup, and 1/2 teaspoon vanilla extract until smooth. If peanut butter clumps, microwave for 15 seconds to soften, then whisk again.
  2. In a mason jar or airtight container, combine 1 cup rolled oats, 1 tablespoon chia seeds, 1/2 teaspoon cinnamon, and a pinch of salt. Stir to combine.
  3. Pour the wet mixture over the dry ingredients. Use a spatula to scrape every last bit from the bowl.
  4. Stir thoroughly until the oats are fully coated and chia seeds are evenly distributed. Scrape the bottom and sides of the jar to ensure no dry oats remain.
  5. Cover the jar with a lid and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats well. If too thick, add a splash of milk to loosen.
  7. Add desired toppings (sliced banana, chocolate chips, extra peanut butter, etc.) and enjoy cold or microwave for 30-60 seconds if preferred warm.

Notes

For best texture, use rolled oats (not quick or steel-cut). Stir well before refrigerating to ensure even absorption. Protein powder brands vary in absorbency; start with 3/4 scoop if using a new brand. Oats keep in the fridge for up to 4 days. For a vegan version, use plant-based milk, vegan protein powder, and maple syrup. For nut-free, substitute sunflower seed butter or tahini for peanut butter.
