  • 6 tbsp unsalted butter, cold and cubed
  • ¾ cup buttermilk, cold

Instructions

  1. Peel and slice peaches into roughly ½-inch thick slices. Toss with granulated sugar, brown sugar, lemon juice, vanilla extract, cinnamon, cornstarch, and a pinch of salt. Set aside to macerate.
  2. Preheat oven to 375°F (190°C).
  3. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Cut in cold butter until mixture resembles coarse crumbs with pea-sized bits.
  4. Pour in cold buttermilk and stir gently until just combined. Do not overmix.
  5. Pour peach mixture into a 9×9-inch baking dish, spreading evenly.
  6. Drop dollops of biscuit dough over peaches, leaving small gaps.
  7. Bake on middle rack for 35-40 minutes until biscuit topping is golden brown and peach filling bubbles.
  8. Let cobbler rest for 10 minutes before serving warm with vanilla ice cream or whipped cream.
