This cozy spiced persimmon walnut bread is the perfect way to use ripe persimmons. It’s an easy, moist quick bread with warm spices and crunchy walnuts that makes your whole house smell like fall.

  • 3 medium ripe Fuyu persimmons (mashed to yield 1 cup)
  • 1 ¾ cups all-purpose flour
  • ¾ cup granulated sugar
  • ¼ cup light brown sugar (packed)
  • ⅓ cup vegetable oil
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¾ cup chopped walnuts (plus extra for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper, leaving overhang on the long sides.
  2. Wash persimmons, cut off tops, slice in half, and scoop out flesh into a medium bowl. Mash with a fork or potato masher until mostly smooth with a few small chunks. Measure out 1 cup of mashed persimmon.
  3. In the same bowl, add granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until well combined and smooth.
  4. In a large mixing bowl, whisk together all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger. Stir in chopped walnuts.
  5. Pour wet ingredients into dry ingredients. Fold gently with a rubber spatula until just combined (a few lumps are fine). Do not overmix.
  6. Scrape batter into prepared loaf pan and spread evenly. Sprinkle extra chopped walnuts on top, pressing in slightly.
  7. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Cool in pan for 10 minutes, then lift out using parchment paper and transfer to a wire rack. Cool completely before slicing.

Notes

Do not overmix the batter to avoid dense bread. Use ripe Fuyu persimmons (soft but not mushy). Toast walnuts for better flavor. Let bread cool completely before slicing to prevent crumbling. Store in an airtight container at room temperature for up to 4 days. Freezes well for up to 3 months.
