  • 1 cup whole milk
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ cup shredded Parmesan cheese

  • ¼ teaspoon red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Brown the kielbasa: Place a large pot over medium-high heat and add olive oil. Once shimmering, add sliced kielbasa in a single layer. Cook undisturbed for 3-4 minutes until deeply browned, then stir and cook for another 2-3 minutes. Transfer to a plate and set aside.
  2. Sauté the aromatics: Reduce heat to medium. Add diced onion to the pot with rendered fat. Cook for 4-5 minutes until soft and translucent, scraping up browned bits. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add broth and potatoes: Pour in chicken broth and bring to a simmer. Add diced potatoes, stir, and bring to a gentle boil. Reduce heat to medium-low, cover, and simmer for 15-20 minutes until potatoes are fork-tender.
  4. Temper the milk: Remove pot from heat. In a small bowl, whisk together whole milk and about ½ cup of hot broth from the pot. Slowly pour the tempered milk mixture back into the pot, stirring constantly.
  5. Add the cheese: With the pot off heat, gradually add shredded cheddar and Parmesan cheese, a handful at a time, stirring continuously until melted and smooth.
  6. Season and finish: Return browned kielbasa to the pot. Stir in smoked paprika and red pepper flakes if using. Taste and season with salt and black pepper. Let simmer gently for 2-3 minutes to reheat the kielbasa.
  7. Serve and garnish: Ladle soup into bowls. Top with sliced green onions, extra cheddar cheese, and fresh parsley. Serve immediately with crusty bread or crackers.

Notes

For best results, shred cheese from a block to avoid graininess. Don’t rush the browning of the kielbasa—it adds essential smoky flavor. Keep heat low when adding dairy to prevent curdling. Soup thickens as it sits; add milk or broth when reheating.
