  • 4 cups beef broth (960 ml), low sodium
  • 1 cup heavy cream (240 ml)
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons butter
  • 3 tablespoons flour (can substitute cornstarch for gluten-free)
  • Salt and freshly ground black pepper to taste
  • Optional garnish: chopped green onions or crispy bacon bits

Instructions

  1. Heat 2 tablespoons of butter in a large skillet over medium-high heat. Add 1 pound of ground beef, breaking it up with a wooden spoon. Cook until no longer pink and starting to brown, about 6-8 minutes. Season lightly with salt and pepper. Drain excess fat if needed.
  2. Add the finely chopped onion and minced garlic to the skillet with the beef. Cook for 3-4 minutes until onions are translucent and fragrant, stirring occasionally.
  3. Sprinkle 3 tablespoons of flour over the beef and onion mixture. Stir constantly for 1-2 minutes to cook out the flour taste and help thicken the soup.
  4. Transfer the beef mixture to the crockpot. Add 4 cups of beef broth, 1 tablespoon Worcestershire sauce, and the diced Yukon Gold potatoes. Stir to combine evenly.
  5. Cover and cook on low for 4 hours or on high for 2 hours until potatoes are tender and soup has thickened slightly.
  6. About 15 minutes before serving, stir in 1 cup heavy cream and 2 cups shredded cheddar cheese. Mix gently until cheese melts and soup is creamy. Adjust seasoning with salt and pepper as needed.
  7. Let the soup sit off heat for a few minutes to thicken further. If too thick, thin with a splash more broth or cream. Serve garnished with chopped green onions or crispy bacon bits if desired.
