Creamy Crockpot White Chicken Chili (Easy Slow Cooker Meal)

A creamy, set-it-and-forget-it white chicken chili made in the slow cooker with cream cheese, tender chicken, and great northern beans. Perfect for busy weeknights and meal prep.

  • 1.5 to 2 pounds boneless, skinless chicken breasts
  • 2 (15-ounce) cans great northern beans, drained and rinsed
  • 2 (4-ounce) cans diced green chiles
  • 4 cups chicken broth (low-sodium recommended)
  • 8 ounces cream cheese, softened and cubed
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano (preferably Mexican)
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste (start with 1 teaspoon salt and 1/2 teaspoon pepper)
  • For serving (optional): fresh cilantro, lime wedges, shredded Monterey Jack cheese, sour cream or Greek yogurt, tortilla chips or crusty bread

Instructions

  1. Dice the onion and mince the garlic. Drain and rinse the canned beans. Open the cans of green chiles. Cube the cream cheese into small pieces. Pat the chicken breasts dry and season lightly with salt and pepper.
  2. Place the seasoned chicken breasts in the bottom of the slow cooker. Scatter the diced onion and minced garlic over the top. Add the drained beans and diced green chiles. Sprinkle all the spices (cumin, oregano, chili powder, smoked paprika, salt, pepper) over everything. Pour the chicken broth around the edges without stirring.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fork-tender.
  4. Carefully remove the chicken breasts from the slow cooker and shred with two forks. Return the shredded chicken to the crockpot.
  5. Add the cubed cream cheese to the hot chili and stir gently until fully melted and incorporated (about 2-3 minutes).
  6. Taste and adjust seasoning as needed. Ladle into bowls and serve with desired garnishes.

Notes

For a thicker chili, mash about 1/2 cup of beans against the side of the crockpot before adding cream cheese. For a spicier version, add a diced jalapeño or use hot green chiles. This chili freezes well for up to 3 months. Reheat gently on the stovetop or microwave.
