  • 12 tablespoons honey or maple syrup (optional)
  • ½ cup fresh strawberries, diced

  • ¼ cup chopped toasted walnuts or pecans
  • A few tablespoons mini chocolate chips or shaved dark chocolate
  • Wooden popsicle sticks
  • Optional toppings: toasted coconut flakes, rainbow sprinkles, crushed graham crackers

Instructions

  1. Peel bananas and slice into ½-inch thick rounds. Lay out on a parchment-lined baking sheet. (10 minutes)
  2. Gently press a wooden popsicle stick halfway through each banana slice. If bananas are too soft, freeze slices for 15 minutes first. (5 minutes)
  3. Whisk together Greek yogurt and honey or maple syrup until smooth and slightly fluffy. (5 minutes)
  4. Dice strawberries and pineapple. Toast chopped nuts in a dry skillet over medium heat for 3-4 minutes until fragrant; let cool. (10 minutes)
  5. Spread a thin layer of the yogurt mixture over the top and sides of each banana slice on the stick. (10 minutes)
  6. Sprinkle diced strawberries, pineapple, toasted nuts, and mini chocolate chips on top, pressing lightly to adhere. (5 minutes)
  7. Freeze the tray for at least 2 hours until bites are firm and yogurt coating is set.
  8. Serve immediately or store in an airtight container or freezer bag for up to 2 weeks. Let sit at room temperature for 5 minutes before serving to soften slightly.

Use firm, ripe bananas for best texture. If bananas are too soft, freeze slices briefly before inserting sticks. Whisk yogurt and honey well for a smooth coating.
