  • 4 pork chops (bone-in or boneless, 68 oz each), preferably thick-cut
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil (extra virgin preferred)
  • 3 tablespoons unsalted butter
  • 4 large garlic cloves, minced
  • 1 cup (240 ml) chicken broth, low sodium
  • ¾ cup (180 ml) heavy cream (full-fat preferred)
  • ½ cup (50 g) grated Parmesan cheese, freshly grated
  • 1 teaspoon Italian seasoning (optional)
  • A handful fresh parsley, chopped for garnish

Instructions

  1. Pat pork chops dry with paper towels and season generously with salt and freshly cracked black pepper on both sides.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering but not smoking (about 2 minutes).
  3. Place pork chops in the skillet without crowding. Cook for 4-5 minutes on the first side without moving them.
  4. Flip and sear the other side for 3-4 minutes until nicely browned but not fully cooked through. Remove chops and set aside on a plate.
  5. Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and sauté for 30 seconds until fragrant, being careful not to burn.
  6. Pour in 1 cup chicken broth, scraping the browned bits from the bottom with a wooden spoon. Let simmer for 2 minutes to reduce slightly.
  7. Stir in ¾ cup heavy cream and ½ cup grated Parmesan cheese. Keep stirring until the cheese melts and the sauce thickens slightly (about 3-4 minutes). Add 1 teaspoon Italian seasoning if using.
  8. Return pork chops to skillet, nestle them in the sauce. Cover and simmer on low heat for 6-8 minutes, flipping once halfway through, until pork reaches an internal temperature of 145°F (63°C).
  9. Remove from heat, sprinkle chopped fresh parsley on top. Let rest for a couple of minutes before serving.

Notes

Pat pork chops dry before searing to ensure a good crust. Use a meat thermometer to avoid overcooking. If sauce thickens too much, stir in a splash of broth or cream to loosen. Freshly grated Parmesan cheese greatly improves flavor and texture. Cast iron skillet recommended for best browning.
