A velvety, cloud-like pumpkin cold foam that adds a soft, luscious texture and subtle pumpkin spice flavor to iced coffee. Quick and easy to make with simple pantry ingredients.

Ingredients

Scale
  • 1 cup (240 ml) cold whole milk (or 2% milk or oat milk for dairy-free)
  • 2 tablespoons (30 grams) pumpkin puree (canned, not pumpkin pie filling)
  • 1 to 2 teaspoons sweetener (light brown sugar or maple syrup, adjust to taste)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Pinch of ground nutmeg
  • 1 tablespoon (15 ml) cold water
  • Optional: pinch of ground ginger
  • Optional: 1/4 teaspoon instant espresso powder

Instructions

  1. Combine 1 cup cold milk, 2 tablespoons pumpkin puree, 1 to 2 teaspoons sweetener, 1/2 teaspoon vanilla extract, 1/4 teaspoon ground cinnamon, a pinch of nutmeg, and 1 tablespoon cold water in a small mixing bowl or jar. Whisk briefly to combine and dissolve the sugar.
  2. Use a handheld milk frother to whip the mixture for about 30 to 45 seconds until thick, pillowy foam forms with soft peaks. Alternatively, seal the jar lid tightly and shake vigorously for 1 to 2 minutes until foamy.
  3. Check the texture; the foam should be airy but creamy and thick enough to float on iced coffee without sinking. Froth longer if too thin, or stir gently and try again if too dense.
  4. Fill a glass with your favorite brewed iced coffee or cold brew over ice.
  5. Spoon or pour the pumpkin cold foam gently over the iced coffee, creating a layered effect.
  6. Optionally, garnish with a pinch of cinnamon or pumpkin pie spice.
  7. Serve immediately and enjoy.

Notes

Use cold milk for best frothing results. Avoid pumpkin pie filling as it affects texture and flavor. Re-froth gently if foam separates after a few minutes. For vegan version, use oat or almond milk and maple syrup. Freshly ground spices enhance flavor. Store leftover foam in airtight container in refrigerator up to 24 hours; re-froth before use. Avoid freezing.
