A rich and comforting chicken dish featuring sun-dried tomatoes in a creamy Parmesan sauce, perfect for quick weeknight dinners that impress.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil (extra virgin preferred)
  • ½ cup chopped sun-dried tomatoes (oil-packed, about 70 g)
  • 3 cloves garlic, minced
  • 1 cup chicken broth (240 ml)
  • 1 cup heavy cream (240 ml)
  • ½ cup grated Parmesan cheese (about 50 g)
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • A handful fresh basil, chopped
  • 1 tablespoon butter

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides generously with salt and black pepper. (Approx. 5 minutes)
  2. Heat 2 tablespoons olive oil in a skillet over medium-high heat until shimmering. Add chicken breasts and cook 5–6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside. (Total 12 minutes)
  3. Reduce heat to medium. Add minced garlic to the skillet and sauté for about 30 seconds until fragrant. Add chopped sun-dried tomatoes and cook for 1–2 minutes. (Approx. 3 minutes)
  4. Pour in chicken broth, scraping the pan bottom to lift browned bits. Let simmer and reduce slightly for about 3 minutes. (Approx. 3 minutes)
  5. Stir in heavy cream, grated Parmesan, Italian seasoning, and red pepper flakes if using. Simmer gently for 4–5 minutes until sauce thickens and becomes silky. (Approx. 5 minutes)
  6. Return chicken breasts to the sauce, spoon sauce over them, cover pan, and warm through on low heat for 3–4 minutes. (Approx. 4 minutes)
  7. Stir in 1 tablespoon butter for richness and glossy finish. Sprinkle chopped fresh basil over the dish before serving. (Approx. 1 minute)

Notes

Use oil-packed sun-dried tomatoes for best flavor; soak dry-packed tomatoes in warm water for 10 minutes if needed. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast. Avoid overcrowding the pan to ensure proper searing. Use a meat thermometer to check chicken doneness. If sauce thickens too much, add broth or cream to loosen. Reheat leftovers gently with a splash of broth or cream to restore creaminess.
