Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and dried Italian herbs.
  2. Heat a large skillet over medium-high heat and add olive oil. Once hot, add chicken breasts and cook for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F). Remove chicken and set aside.
  3. Lower heat to medium. Add minced garlic to the pan and stir quickly for about 30 seconds to avoid burning.
  4. Add chopped sun-dried tomatoes and cook for 1-2 minutes until fragrant.
  5. Pour in heavy cream and chicken broth, stirring to combine and scraping up browned bits from the pan.
  6. Add fresh baby spinach and stir until wilted, about 2 minutes.
  7. Stir in grated Parmesan cheese until melted and sauce thickens slightly. Adjust seasoning with salt, pepper, and additional Italian herbs if needed.
  8. Return chicken breasts to the pan, nestling them into the sauce. Simmer gently for 3-4 minutes to meld flavors and warm the chicken through.
  9. Serve chicken topped with creamy sauce and garnish with fresh basil or parsley if desired.

Do not overcrowd the pan when searing chicken to ensure proper browning. Use room temperature chicken for even cooking. Add garlic after removing chicken to prevent burning.
