A quick and easy one pot Tuscan chicken pasta recipe featuring a creamy garlic sauce, sun-dried tomatoes, and fresh spinach. Perfect for weeknight dinners with minimal cleanup and maximum flavor.

  • 2 large boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil (extra virgin preferred)
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil, drained)
  • 3 cups fresh baby spinach
  • 2 1/2 cups low sodium chicken broth
  • 1 cup heavy cream (or half-and-half for lighter option)
  • 3/4 cup freshly grated Parmesan cheese
  • 8 ounces penne or rigatoni pasta
  • 1 teaspoon Italian seasoning (oregano, thyme, basil blend)
  • Salt and pepper to taste
  • Red pepper flakes, optional pinch

Instructions

  1. Cut the chicken breasts into bite-sized chunks, season lightly with salt, pepper, and half the Italian seasoning.
  2. Heat olive oil over medium-high heat in a large deep skillet or Dutch oven. Add chicken pieces and cook until golden brown on all sides but not fully cooked through, about 4 to 5 minutes. Remove chicken and set aside.
  3. In the same pot, add minced garlic and chopped sun-dried tomatoes. Stir constantly for about 1 minute until fragrant.
  4. Pour in the chicken broth and heavy cream, stirring to combine. Add the pasta directly into the simmering liquid. Bring to a gentle boil, then reduce heat to medium-low. Cover and let the pasta cook, stirring occasionally, for 12 to 15 minutes until tender and sauce thickens.
  5. When pasta is nearly tender, return the partially cooked chicken to the pot. Stir in the baby spinach and remaining Italian seasoning. Cook uncovered for another 2 to 3 minutes until chicken is cooked through and spinach has wilted.
  6. Remove the pot from heat, stir in freshly grated Parmesan cheese until melted and creamy. Taste and adjust salt, pepper, and red pepper flakes if using.
  7. Serve immediately, optionally garnished with fresh basil or extra Parmesan.

Notes

If the sauce thickens too much before serving, stir in a splash of broth or cream to loosen it. Stir pasta occasionally during cooking to prevent clumping and burning. Use fresh grated Parmesan for best melting and flavor. For gluten-free, substitute pasta with rice or chickpea pasta and adjust cooking time. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast or dairy-free cheese.
