A quick and easy creamy Tuscan garlic chicken recipe made in one pot with simple ingredients, perfect for a cozy and flavorful weeknight dinner.

  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 680 grams), pounded to even thickness
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed preferred)
  • 3 cups fresh baby spinach leaves
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml)
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning (oregano, basil, thyme blend)
  • Salt and pepper to taste
  • Optional: red pepper flakes, fresh basil for garnish

Instructions

  1. Pat the chicken breasts dry and season both sides generously with salt, pepper, and Italian seasoning. (5 minutes)
  2. Heat olive oil over medium-high heat in a large skillet. Add chicken breasts and cook undisturbed for 5-6 minutes until golden brown. Flip and brown the other side for 5 minutes. Chicken does not need to be fully cooked. (10-12 minutes)
  3. Transfer chicken to a plate and tent loosely with foil to keep warm. Do not clean the pan.
  4. Lower heat to medium. Add minced garlic and sun-dried tomatoes to the skillet. Stir frequently for 1-2 minutes until garlic is fragrant but not browned. (2 minutes)
  5. Pour in chicken broth and heavy cream, stirring to combine and lift browned bits. Simmer gently for 3-4 minutes until sauce thickens slightly. (3-4 minutes)
  6. Add grated Parmesan and fresh spinach leaves. Stir gently until spinach wilts and cheese melts into the sauce. (2-3 minutes)
  7. Return chicken breasts to the pan, nestling them into the sauce. Cover with lid and simmer gently for 5-7 minutes until chicken is cooked through (internal temperature 165°F / 74°C). (7 minutes)
  8. Taste sauce and adjust seasoning with salt, pepper, and optional red pepper flakes. Garnish with fresh basil if desired. (1-2 minutes)

Notes

Avoid burning garlic to prevent bitterness. Simmer sauce gently to prevent curdling. If sauce thickens too much, add more broth or cream. For dairy-free, substitute heavy cream with coconut milk and Parmesan with nutritional yeast. Chicken thighs can be used but require longer cooking time.
