Instructions

  1. In a medium bowl, combine ½ cup rolled oats, 1 tablespoon chia seeds, 1 tablespoon cocoa powder, and a tiny pinch of salt. Whisk together with a fork to break up any clumps.
  2. Add ⅓ cup milk, ¼ cup Greek yogurt, 2 tablespoons creamy peanut butter, 1 tablespoon maple syrup or honey, and ½ teaspoon vanilla extract. Stir vigorously until the peanut butter is fully incorporated (about 30 seconds). If the peanut butter is stubborn, microwave it for 10 seconds first.
  3. Check the consistency—it should be loose and soupy. If too thick, add another tablespoon of milk. If too thin, it will firm up overnight.
  4. Reserve about 1 tablespoon of the chopped peanut butter cup for topping. Gently fold the rest into the oat mixture, being careful not to overmix.
  5. Pour the mixture into a mason jar or airtight container. Sprinkle the reserved chopped peanut butter cup on top and press them in slightly.
