  • 1 1/2 cups (360ml) unsweetened almond milk (or any milk of choice)
  • 1/4 cup (40g) chia seeds
  • 3 tablespoons (60ml) pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. In a mixing bowl or large mason jar, combine the almond milk, pumpkin puree, maple syrup, and vanilla extract (if using). Whisk until smooth and no streaks of pumpkin remain.
  2. Sprinkle in the chia seeds, cinnamon, and salt. Whisk vigorously for a full minute to ensure chia seeds are evenly distributed and not clumping.
  3. Let the mixture rest for 5 minutes, then whisk again to prevent chia seeds from settling.
  4. Pour the mixture into individual jars or a single container with a lid. If using a mason jar, simply screw on the lid.
  5. Refrigerate for at least 4 hours, but preferably overnight (8-12 hours), until the pudding is thick and creamy.
  6. Stir before serving. If too thick, add a splash of milk; if too thin, refrigerate longer. Serve cold or warm, with desired toppings.

Notes

For best texture, whisk chia seeds thoroughly and let set overnight. Adjust sweetness to taste. For a flavor boost, add a pinch of nutmeg, ginger, or pumpkin pie spice. Store in an airtight container in the refrigerator for up to 5 days. Not recommended for freezing.
