Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly oil it.
  2. Peel, seed, and cut the butternut squash into roughly 1-inch cubes. Toss the cubes in olive oil, salt, and a pinch of black pepper until well coated. Spread them out in a single layer on the baking sheet.
  3. Roast the squash for 25-30 minutes, flipping halfway through, until tender with golden edges.
  4. While the squash roasts, heat a large pot over medium heat. Add a splash of olive oil and sauté the chopped onion for 5-7 minutes until soft and translucent.
  5. Add the minced garlic and cook for another 1-2 minutes until fragrant, being careful not to burn it.
  6. Add the roasted squash to the pot, then pour in the vegetable broth. Bring to a gentle simmer and cook for 10 minutes.
  7. Remove the pot from heat. Using an immersion blender, puree the soup until silky smooth. If using a countertop blender, blend in batches with the lid vented. Add more broth if the soup is too thick.
  8. In a small bowl, whisk together the heavy cream and ground cinnamon.
  9. Taste the soup and adjust salt and pepper as needed.
