  • 8 ounces (225 grams) feta cheese, crumbled
  • 1/2 cup (120 ml) roasted red peppers, drained and chopped
  • 1/4 cup (60 ml) Greek yogurt, full-fat or 2%
  • 1 small clove garlic, minced or pressed
  • 2 tablespoons (30 ml) extra virgin olive oil, plus extra for drizzling
  • 1 tablespoon (15 ml) fresh lemon juice
  • 1 tablespoon fresh parsley or dill, chopped (optional)
  • Freshly ground black pepper, to taste
  • Pinch of sea salt

Instructions

  1. Prepare your ingredients: Drain the jarred roasted red peppers thoroughly. Crumble the feta cheese into smaller pieces. Mince the garlic and chop fresh herbs if using.
  2. Combine in food processor: Add feta, roasted red peppers, garlic, Greek yogurt, olive oil, and lemon juice to the food processor bowl.
  3. Pulse and blend: Pulse several times, then blend continuously until smooth and whipped, scraping down the sides as needed.
  4. Season and adjust: Taste and add black pepper and a pinch of sea salt if needed.
  5. Final whip and transfer: Blend once more to incorporate seasoning. Transfer to serving bowl, drizzle with olive oil, and sprinkle fresh herbs on top.
  6. Chill (optional): Refrigerate for at least 30 minutes to meld flavors and firm up texture.

Notes

Use good quality sheep’s milk feta for creaminess. Drain roasted peppers well to avoid watery dip. Pulse first then blend to avoid overprocessing. Taste before adding salt as feta is salty. Chill for best flavor. Add water or olive oil to adjust thickness if needed.
