Instructions

  1. Pat the chicken thighs dry with paper towels to remove excess moisture (about 3 minutes).
  2. In a medium mixing bowl, combine minced garlic, chopped fresh thyme, paprika, salt, black pepper, olive oil, and lemon zest if using. Stir well until it forms a paste (about 2 minutes).
  3. Add the chicken thighs to the bowl and rub the mixture all over the skin and under the skin where possible, ensuring every inch is covered (about 5 minutes). Let the chicken sit in the rub for at least 15 minutes at room temperature or up to 2 hours in the fridge (30 minutes recommended).
