  • 4 salmon fillets (about 6 oz / 170 g each), skin on (preferably wild-caught)
  • 3 tablespoons white or yellow miso paste
  • 1 tablespoon soy sauce (low sodium if preferred)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon rice vinegar
  • 1 teaspoon grated fresh ginger (optional)
  • 1 clove garlic, minced
  • 1 teaspoon toasted sesame oil
  • Salt and freshly ground black pepper, to taste
  • 1 large English cucumber, thinly sliced
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon soy sauce
  • 1 teaspoon sugar or honey
  • 1 tablespoon toasted sesame seeds
  • 2 green onions, thinly sliced
  • Pinch of red pepper flakes (optional)

Instructions

  1. Prepare the Miso Glaze: In a small bowl, whisk together 3 tablespoons miso paste, 1 tablespoon soy sauce, 1 tablespoon honey, 1 teaspoon rice vinegar, grated ginger, minced garlic, and 1 teaspoon toasted sesame oil until smooth (about 3 minutes).
  2. Marinate the Salmon: Pat the salmon fillets dry with paper towels. Season lightly with salt and pepper. Coat the top (skin side down) of each fillet generously with the miso glaze. Let rest for 10-15 minutes at room temperature.
  3. Prepare the Sesame Cucumber Salad: Thinly slice the cucumber and place in a mixing bowl. Add 1 tablespoon toasted sesame oil, 1 tablespoon rice vinegar, 1 teaspoon soy sauce, 1 teaspoon sugar, sliced green onions, toasted sesame seeds, and red pepper flakes if using. Toss gently and set aside.
  4. Preheat the Air Fryer: Set air fryer to 400°F (200°C) and heat for about 3 minutes.
  5. Cook the Salmon: Place salmon fillets skin side down in the air fryer basket without overlapping. Cook for 8-10 minutes depending on thickness until glaze is bubbling and caramelized and skin is crisp. Check for flakiness with a fork.
  6. Rest and Serve: Remove salmon from air fryer and let rest for 2-3 minutes. Serve alongside a generous scoop of sesame cucumber salad.

Notes

Dry salmon well before glazing to ensure crispiness. Preheat air fryer for best results. Avoid overcrowding the basket. If glaze browns too fast, lower temperature and extend cooking time. Toast sesame seeds yourself for better flavor. The recipe can be adapted for gluten-free by using tamari and vegan by substituting honey with maple syrup.
