A quick and easy recipe for crispy samosas made in an air fryer, paired with a fresh and tangy mint chutney. Perfect for a crunchy, flavorful snack without the mess of deep frying.

  • 2 medium potatoes, peeled and diced (about 300g / 10.5 oz) — boiled until tender
  • ½ cup frozen peas (about 75g / 2.6 oz), thawed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, finely chopped (adjust to taste)
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • ½ tsp turmeric powder
  • ½ tsp coriander powder
  • Salt to taste
  • 2 tbsp vegetable oil or ghee
  • Fresh cilantro leaves, chopped (about 2 tbsp)
  • 1012 spring roll wrappers or phyllo dough sheets
  • Water for sealing edges
  • For the Mint Chutney:
  • 1 cup fresh mint leaves
  • ½ cup fresh cilantro leaves
  • 1 small green chili (optional, for heat)
  • Juice of 1 lemon
  • 1 tsp sugar
  • Salt to taste
  • 23 tbsp water (adjust for blending)

Instructions

  1. Prepare the Filling: Heat oil or ghee in a skillet over medium heat. Add cumin seeds and let them sizzle for a few seconds until fragrant.
  2. Add the chopped onions, garlic, ginger, and green chili. Sauté for about 3-4 minutes until the onions turn translucent and golden.
  3. Mix in turmeric, coriander powder, and garam masala. Stir well for 1 minute to toast the spices.
  4. Add the boiled potatoes and peas. Gently mash the potatoes with a spoon, combining all ingredients. Cook for another 4-5 minutes, stirring occasionally. Season with salt and add chopped cilantro at the end. Remove from heat and let cool completely.
  5. Prepare the Samosa Wrappers: Lay out a spring roll wrapper on a clean surface. Cut in half diagonally to make two triangles.
  6. Take one triangle and form a cone by folding the longest side up and sealing the edge with a little water. Fill the cone with 2 tablespoons of the cooled filling.
  7. Seal the open edges by folding them over and pressing firmly with a moistened finger. Make sure there are no gaps where filling could escape.
  8. Repeat the process for the remaining wrappers and filling.
  9. Cook in the Air Fryer: Preheat the air fryer to 375°F (190°C) for 3 minutes.
  10. Place the samosas in a single layer in the air fryer basket, leaving some space between them. Spray or brush lightly with oil for extra crispness.
  11. Cook for 12-15 minutes, flipping halfway through, until samosas are golden and crispy.
  12. Make the Mint Chutney: While samosas cook, blend mint leaves, cilantro, green chili (if using), lemon juice, sugar, salt, and water until smooth. Adjust seasoning to taste.
  13. Serve the hot crispy samosas with the refreshing mint chutney on the side.

Notes

Let the filling cool completely before assembling to avoid soggy samosas. Spray or brush samosas lightly with oil before air frying for a perfect golden crunch. Do not overcrowd the air fryer basket to ensure even crisping. Flip samosas halfway through cooking for even browning. If you don’t have an air fryer, bake at 400°F (200°C) for 20-25 minutes, flipping halfway.
