  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup buffalo sauce (recommended: Frank’s RedHot Original)
  • 2 tablespoons melted butter (or vegan butter)
  • 1/2 cup sour cream (or Greek yogurt)
  • 1/4 cup mayonnaise
  • 1/4 cup crumbled blue cheese (plus more for garnish)
  • 1 tablespoon lemon juice (fresh squeezed)
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Cut the cauliflower into bite-sized florets, about 1.5 to 2 inches across. Discard the tough stem and large leaves. Pat dry if needed.
  3. In a large mixing bowl, whisk together the flour, milk, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth. The batter should be thick enough to coat the back of a spoon but still pourable.
  4. Add the cauliflower florets to the bowl with the batter. Toss until every floret is evenly coated.
  5. Arrange the battered florets on the prepared baking sheet in a single layer, making sure they are not touching.
  6. Bake for 20 minutes. Remove the sheet and flip each floret using tongs.
  7. Bake for another 10-15 minutes, until the cauliflower is golden brown and crispy on the outside. Total baking time: 30-35 minutes.
  8. While the cauliflower bakes, whisk together the buffalo sauce and melted butter in a medium bowl.
  9. Once the cauliflower is done baking, immediately transfer the hot florets to the bowl with the buffalo sauce mixture. Toss gently until every piece is coated.
  10. Spread the sauced cauliflower back onto the baking sheet and bake for another 5 minutes to set the sauce.
  11. Serve immediately with blue cheese dip or ranch dressing on the side. Garnish with chopped green onions or celery sticks if desired.

Notes
